Try This Cajun Chicken and Sticky Rice Recipe

Ingredients:

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup of sticky rice (also known as glutinous rice)
  • 2 cups of chicken broth
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Season the chicken thighs generously with Cajun seasoning, making sure to coat both sides evenly. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken thighs to the skillet and cook until golden brown on both sides, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add diced onion and bell pepper. Cook until softened, about 5 minutes. Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  3. Stir in sticky rice and chicken broth. Season with salt and pepper to taste. Place the cooked chicken thighs on top of the rice mixture in the skillet.
  4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
  5. Once the rice is cooked and most of the liquid has been absorbed, remove the skillet from heat and let it sit, covered, for 5 minutes. Garnish with chopped fresh parsley before serving.
