These BBQ Pulled Mushrooms Are Perfect for Your Next Cookout

Are you vegetarian or simply looking for ways to cut meat out of your diet? Either way, you’re in for a treat. Here’s your guide to making meaty and succulent BBQ pulled mushrooms that will be a hit at your next cookout.

Ingredients:

  • 6 king oyster mushrooms
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon chili powder
  • 2 tablespoons olive oil
  • 2 brioche buns
  • 3 tablespoons BBQ sauce

Instructions:

  1. Preheat oven to 375°F. Shred the mushrooms into 1/2-inch pieces and spread them evenly onto a baking sheet. Add chili powder, garlic powder, paprika, and salt and drizzle in olive oil. Toss the mixture to coat evenly.
  2. Bake the mushrooms for about 20 minutes, until they’re slightly golden.
  3. Drizzle the mixture in BBQ sauce before baking for a further 5 minutes, until the sauce is warm.
  4. Spread mayonnaise on the top brioche buns and pile the mushrooms on the bottom buns before closing the sandwiches.
