This Spicy Coconut Grilled Chicken Will Leave Your Guests Craving More

Given that chicken can often form the centerpiece of any meal, ensuring it tastes scrumptious is vital to the success of your dinner. Here is a spicy coconut grilled chicken that will be sure to sauce up your dinner and leave your guests craving more.

Ingredients:

  • 2 pounds boneless and skinless chicken thighs
  • 1/4 cup chili-garlic sauce
  • 1/4 cup fresh lime juice
  • 1/4 cup light brown sugar
  • 3/4 cup pineapple juice
  • 1/4 cup fresh cilantro leaves
  • 1 tablespoon grated ginger
  • 1 sliced pineapple
  • 1 can coconut milk
  • 2 tablespoons soy sauce
  • 3 cloves garlic

Instructions:

  1. Pour coconut milk, chili-garlic sauce, lime juice, brown sugar, garlic, ginger, pineapple juice, and soy sauce. Whisk together and add the chicken. Toss to coat. Refrigerate the mixture for at least 20 minutes.
  2. Place the chicken onto a baking sheet, allowing the excess marinade to drip back into the bowl. Season chicken with 3/4 teaspoon salt.
  3. Preheat the grill on medium-high heat.
  4. Pour the remaining marinade into a medium saucepan. Warm over the medium-high heat and stir occasionally for 5 minutes.
  5. Grill the chicken and pineapple for about 8 to 10 minutes until lightly charred.
  6. Transfer the chicken and pineapple to a platter and drizzle in the remaining marinade. Serve with cilantro.
