Ingredients:
- 1 cup of all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup of almond milk (or any plant-based milk)
- 2 tablespoons vegetable oil (plus extra for cooking)
- 1 teaspoon vanilla extract (optional)

Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined. In a separate bowl, mix together the almond milk, vegetable oil, and vanilla extract (if using).
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps in the batter are okay. Heat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake, spreading it slightly with the back of a spoon. Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges start to look set.
- Carefully flip the pancakes with a spatula and cook for another 1-2 minutes on the other side, until golden brown and cooked through. Repeat with the remaining batter, adding more oil to the skillet as needed.
- Serve your delicious vegan pancakes warm, topped with your favorite toppings such as maple syrup, fresh fruit, or vegan whipped cream.
