Toad in the hole is a classic example of comforting British cuisine that combines all of the best savory flavors to make a wonderful dish. It consists of batter as you might find in a Yorkshire pudding, with sausages cooked amidst the batter. It is normally served with a thick gravy and mashed potatoes and peas and makes for an absolute treat on a cold night!

Ingredients:

  • 8 pork sausages (can use vegan sausages if preferred)
  • 2 tablespoons vegetable oil
  • 1 cup of plain flour
  • 1 cup of whole milk
  • 3 large eggs
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 425°F (220°C). Place the sausages in a baking dish or roasting pan, drizzle with vegetable oil, and roast in the oven for 15 minutes.
  2. Meanwhile, you can prepare the batter. In a bowl, whisk together your flour, eggs, milk, Dijon mustard, salt, and black pepper until you have a smooth batter. Let it rest while the sausages cook.
  3. Once the sausages are partially cooked, pour the batter over them. Ensure the sausages are evenly spaced in the dish. Return the dish to the oven and bake for an additional 25-30 minutes or until the Yorkshire pudding is puffed and golden brown.
  4. While the toad in the hole is baking, prepare your favorite gravy, and some mashed potatoes and green peas to serve alongside.
  5. Once out of the oven, the toad in the hole should be beautifully risen and golden. Serve slices of toad in the hole with a generous ladle of onion gravy and potatoes and peas for a deeply comforting meal.
