With the summer fast approaching, you may start longing for a tropical vacation so that you can enjoy the warm weather. Even if you aren’t going on vacation yet, you can already start enjoying the summer mood by slurping on a saucy Bikini Bellini cocktail. Here is your guide to making this cocktail which will be perfect for your summer vacation.
Ingredients:
- 1 slice Persian cucumber
- 1/2 granulated sugar
- 1/2 cup fresh basil
- 1 ounce pineapple juice
- 4 ounces Prosecco
- Pineapple wedge and basil leaves

Instructions:
- Cook the sugar and 1 cup of water in a saucepan over medium heat until the sugar is dissolved. Then, add basil and cucumber and stir to combine. Once combined, allow the cucumber and basil syrup to cool.
- Strain 2 tablespoons of syrup into a small bowl.
- Pour the strained syrup into a champagne glass along with 1 ounce of pineapple juice before topping it off with Prosecco.
- Garnish with pineapple wedge and basil leaves.
