Making an Authentic Pasta Primavera

Filled with tasty vegetables, scrumptious sauce, and of course, a filling spaghetti, a pasta primavera is both a nourishing and delicious dish. Here is your guide to making an authentic pasta primavera that will prove to be a highly satisfying meal for you and your family.

Ingredients:

  • 12 ounces spaghetti
  • 1 large zucchini
  • 1 bunch asparagus
  • 1 bell pepper
  • 1 cup grape tomatoes
  • 1/4 cup olive oil
  • 3/4 cup heavy cream
  • 1/3 cup frozen peas
  • 2 ounces Parmesan
  • 5 cloves garlic
  • salt
  • ground black pepper
  • lemon juice

Instructions:

  1. Cook the pasta in a pot of boiling water according to the package’s instructions until al dente. Reserve 2 cups water.
  2. Heat 1/4 cup oil in a skillet over medium heat. Cook the zucchini for about 3 to 4 minutes until lightly golden.
  3. Add asparagus and cook for about 4 minutes. Season with salt and transfer the vegetables to a plate.
  4. Add another 1 to 2 tablespoons of olive oil to the skillet and cook the onions and leeks for about 5 minutes until caramelized. Add bell pepper and cook for 3 to 4 minutes. Add garlic and cook for another 2 minutes.
  5. Reduce heat to medium-low and add cream, tomatoes, peas, and the remaining pasta water to the pan. Cook for another 2 minutes, until tomatoes burst, and combine with pasta water, spaghetti, zucchini, asparagus, and parmesan, until the cheese is melted.
  6. Stir in the lemon zest and sprinkle in pepper before serving.
